Candidates must have at least three years high-end fine dining experience with at least one year in a Captain or Assistant Maitre ‘d position. Excellent food and wine knowledge is a must as well as a passion for the hotel and restaurant industry. The Captain will cover all duties in the absence of the Maitre ‘d. International/Carribean experience would be an asset. This position is full-time, hands-on and requires the successful applicant to work days/evenings/split-shifts/public holidays 6 days per week.
